Always a winner on a warm sunny day!

What you need

1 lettuce of your choice (a mignonette, cos or similar is a little more interesting than the old ice berg).
1 hard-boiled egg.
1 tbsp of olive oil.
Dash of Tabasco sauce.
Juice of quarter of a lemon.
2 slices of bacon.
Tin of anchovy fillets in oil.
1 clove of garlic.
6 slices of white bread, with the crust removed.
Some slivers of thinly shaved Parmesan Cheese from a fresh block.


The Steps
1. Chop up the bacon into small pieces and fry until crisp.
2. Remove the bacon from the pan and fry the bread, cut into small squares, in the bacon until also crisp. You will probably need to add some extra butter.
3. Cut the clove of garlic in half and rub all around the bowl in which you are preparing the salad.
4. Into the bowl add: the olive oil; Tabasco; lemon juice; and grind a little black pepper and then mix thoroughly.
5. Wash and dry the lettuce and break into bite-sized pieces into the bowl.
6. Add the parmesan cheese.
7. Add the anchovy fillets, cooked bacon and chopped boiled egg and toss well.
8. When ready to serve, add the croutons (fried bread pieces). These should only be added at the last moment otherwise they can go very soggy.
