Sauté wolfish.

One of the greatest eating fish here in Norway is the deep sea wolffish. Mixed with a few simple tricks you can create one of the world’s best dinners.

Ingredients


· 400 grams wolfish.
· Honey
· Sesame oil
· Mustard (best French if you can)
· Butter

Side dish
· Mixed vegetables and potatoes.


Method

First make a marinade of mustard, sesame oil, butter and honey. Mix to taste. (Mix over a low heat until all ingredences have formed a paste) I like the strong taste of the mustard mixed with the honey. Marinade the fish with your “sauté mix” and then seal both side of your of your filets and then place in an pre-heated (180.c) oven until your fillets are juicy but over cooked. Just before you think your fish is ready to paint your fish with the last of the sauté and serve with your favourite vegetables. 400 grams of wolfish is enough for two persons.
